Here are some of my family's favorite holiday cookie recipes. 

Busy Mom CookiesBusy Mom Cookies: These cookies are my grandmother's favorite to eat and bake. They are quick and easy, which is what has made them one of our family's favorites.  It's also a great recipe for children because it's so simple.

Busy Mom Cookies  

Any box cake mix 2 eggs
1/2 cup vegetable oil raisins, nuts, chocolate chips (optional)
Preheat oven to 350. Mix all ingredients well. Drop by teaspoon onto greased cookie sheet about 2 inches apart. Bake 8 - 10 minutes. Makes about 3 dozen.

 

Chocolate Bakeless CookiesChocolate Bakeless Cookies: Also called No-Bake Cookies. I've learned recently that there are several different recipes for these.  Some include very little cocoa, but this one is very chocolately.

Chocolate Bakeless Cookies

2 cups sugar 1/2 cup butter
1/2 cup cocoa 1/2 cup milk
Boil and simmer 2 minutes. Remove from fire. Add the following ingredients:
1/2 cup peanut butter 3 cups quick oats
1/2 tsp. vanilla  
Stir until oats are well coated. Drop by teaspoon onto wax paper or press into pan. Leave until hard.

 

Peanut Butter FudgePeanut Butter Fudge:  My grandma's recipe again.  I get some of my best from her, because she's had more years to perfect them.  This fudge, if done correctly, will melt in your mouth and is too good to resist.

Peanut Butter Fudge

1 cup sugar few grains of salt
1 cup brown sugar 1/2 cup peanut butter
2 tbsp. butter 1 cup marshmallows
1/2 cup milk 1 tsp. vanilla
Cook sugars, butter, milk, and salt to soft ball stage of candy thermometer. Add marshmallows and peanut butter just before removing from heat. Cool to room temperature. Add vanilla. Beat until mixture is thick and creamy. Pour into well-buttered pan.
